Roasted Cabbage & Onions

Ingredients

    Cabbage

  1. 1 medium head cabbage (about 2 lbs) coarsely chopped
  2. 2 large onions, chopped
  3. 1/4 c olive oil
  4. 3/4 t salt
  5. 3/4 t pepper
  6. Dressing

  7. 2 T white wine vinegar
  8. 2 T olive oil
  9. 3 T mined fresh chives, or 1 T dried, rehydrated
  10. 3 t minced fresh tarragon, or 1 T dried, rehydrated
  11. 1/2 t to 1 T Dijon mustard, to taste
  12. 1 T lemon juice
  13. 1/2 t salt
  14. 1/2 t pepper

Instructions

    Cabbage

  1. Preheat oven and a roasting pan to 450°F.
  2. Place cabbage and onions in a large bowl.
  3. Drizzle with oil, sprinkle with salt and pepper and toss to coat.
  4. Carefully, transfer to the preheated roasting pan, spreading evenly.
  5. Roast 30 to 45 minutes or until vegetables are tender and lightly browned, stir every 15 minutes.
  6. Transfer to a serving bowl.
  7. Dressing

  8. In a small bowl, whisk vinegar, oil, chives, tarragon, mustard, lemon juice, salt, and pepper until blended.
  9. Drizzle desired amount of dressing over cabbage mixture, toss to coat.
  10. Let stand 10 minutes to allow flavors to blend.
  11. Serve warm or at room temperature.
