Shaved Vegetable Salad

Pre-Notes

    Shave the beets into paper-thin rounds, the carrots into paper-thin slices on a bias, and the radish into paper-thin half-moons on a mandoline.

    The vegetables can be sliced one day in advance and the salad assembled just before serving.

Ingredients

  1. 1 small zucchini, shaved
  2. 1 medium purple carrot, peeled and shaved
  3. 1 medium white carrot, peeled and shaved
  4. 1 medium orange carrot, peeled and shaved
  5. 1 orange beet, peeled and shaved
  6. 1 medium watermelon radish, halved and shaved
  7. 1/4 small red onion, shaved or sliced thin
  8. 3 oz arugala
  9. 1 recipe Poppy Seed Dressing
  10. toasted pistachios
  11. goat cheese, crumbled

Instructions

  1. On a platter, layer zucchini, and carrots along the outer edges and bottom of the platter.
  2. Place arugala on top of the shaved vegetables.
  3. Place beets and watermelon radish, and red onion, on top of salad.
  4. Sprinkle with goat cheese and pistachios.
  5. Drizzle with poppy seed dressing, just before serving.
