Ingredients

    Sauce

  1. 1 T vegetable oil
  2. 2 t garlic, minced to paste
  3. 1 t sweet smoked paprika
  4. ½ t kosher salt
  5. ½ t cayenne pepper
  6. 1/4 c tomato paste
  7. 1/2 c water
  8. 2 t sherry vinegar
  9. 1/2 c mayonnaise
  10. Potatoes

  11. 1 recipe Roasted Fingerling Potatoes

Instructions

    Sauce

  1. Heat oil in small saucepan over medium-low heat until shimmering.
  2. Add garlic, paprika, salt, and cayenne and cook until fragrant, about 30 seconds.
  3. Add tomato paste and cook for 30 seconds.
  4. Whisk in water and bring to boil over high heat.
  5. Reduce heat to medium-low and simmer until slightly thickened, 4 to 5 minutes.
  6. Transfer sauce to bowl, stir in vinegar, and let cool completely.
  7. Once cool, whisk in mayonnaise.
  8. Sauce can be refrigerated for up to 24 hours. Bring to room temperature before serving.
