Spanish Style Braised Green Beans (slow cooker)

Ingredients

  1. 2 T minced garlic
  2. 2 T extra virgin olive oil
  3. 1 T paprika
  4. salt
  5. pepper
  6. 1/4 t red pepper flakes
  7. 1/2 c chicken broth
  8. 2 lb green beans, trimmed
  9. 1 c slivered almonds, toasted
  10. 1/2 c pitted green olives, chopped
  11. 2 T sherry vinegar

Instructions

  1. Microwave garlic, 1 T oil, paprika, 1/2 t salt, and pepper flakes in bowl, stirring occasionally, until fragrant, about 1 minute; transfer to slow cooker.
  2. Stir in broth, then add green beans and toss to coat.
  3. Cover and cook until green beans are tender, 8 to 9 hours on low or 5 to 6 hours on high. (green beans can be held on warm or low setting for up to 2 hours)
  4. Stir in almonds, olives, vinegar and remaining 1 T oil.
  5. Season with salt and pepper.
