Watermelon Salsa

  1. 1 1/2 teaspoons lime zest
  2. 1/4 c fresh lime juice
  3. 1 T sugar
  4. 3/4 t black pepper
  5. 4 c seeded and finely chopped watermelon
  6. 1 cucumber, peeled, seeded and diced
  7. 1 mango, peeled and diced
  8. 1 jalapeno pepper, seeded and minced
  9. 1 small red onion, finely chopped
  10. 8 fresh basil leaves, finely chopped (optional)
  11. tortilla chips, for serving


  1. Stir together the lime zest, lime juice, sugar, and pepper in a bowl.
  2. Add the watermelon, cucumber, mango, jalapeno, onion and basil and toss gently.
  3. Chill the salsa until ready to serve.
  4. Serve with tortilla chips.
