Goat Cheese and Roasted Corn Quesadillas

    Trader Joe's Hatch Valley salsa is delicous with this recipe!


  1. 1 c fresh or frozen corn kernels
  2. 5 oz goat cheese, softened, (2/3 c)
  3. 10 (6 in) flour tortillas
  4. 12 T bottled salsa verde, divided
  5. cooking spray


  1. Heat a large nonstick skillet over medium-high heat.
  2. Add corn; sauté 2 minutes or until browned.
  3. Place corn in a small bowl.
  4. Add goat cheese and green onions to corn; stir until well blended.
  5. Divide corn mixture evenly among 5 tortillas; spread to within 1/4 inch of sides.
  6. Drizzle each with 1 1/2 teaspoons salsa; top with remaining 5 tortillas.
  7. Heat pan over medium-high heat. Coat pan with cooking spray.
  8. Place 2 quesadillas in pan; cook 1 1/2 minutes on each side or until golden.
  9. Remove from pan; keep warm.
  10. Wipe pan clean with paper towels; recoat with cooking spray. Repeat procedure with remaining quesadillas.
  11. Cut each quesadilla into 4 wedges.
  12. Serve with remaining salsa.
