Lavender Cookies

Ingredients

  1. 1/2 c butter, softened
  2. 1/2 c shortening
  3. 1 1/4 c sugar
  4. 2 eggs
  5. 1 t vanilla extract
  6. 1/2 t almond extract
  7. 2 1/4 c flour
  8. 4 t dried lavender flowers
  9. 1 t baking powder
  10. 1/2 t salt

Instructions

  1. Preheat oven to 375°F.
  2. Cream butter, shortening and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Beat in vanilla and almond extracts.
  5. In a separate bowl, whisk flour, lavender, baking powder and salt; gradually beat into creamed mixture.
  6. Drop batter by rounded teaspoonfuls 2 inches apart onto baking sheets lightly coated with cooking spray.
  7. Bake until golden brown, 8-10 minutes.
  8. Cool 2 minutes before removing to wire racks.
  9. Store in an airtight container.
