Lemon Roasted Asparagus

    Alternately, the asparagus can be grilled, if you prefer.


  1. 1 lemon
  2. 1 t kosher salt
  3. 1 lb asparagus, trimmed
  4. olive oil for drizzling


  1. Zest the lemon and lay out the zest to dry it slightly, about 30 minutes.
  2. Preheat the oven to 450°F.
  3. Mix the lemon zest with the salt in a small bowl and set aside.
  4. Cut the lemon in half and set aside.
  5. Drizzle the asparagus with olive oil on a baking sheet and toss to coat.
  6. Roast until the asparagus is tender and starting to color, 8 to 10 minutes.
  7. Transfer the asparagus to a platter.
  8. Before serving, squeeze on the juice of the cut lemon, to taste.
  9. Sprinkle with the lemon salt, to taste.
