Benedictine - A Derby Day Dip (Cucumber Dip)

  1. 1 large cucumber
  2. 8 oz cream cheese, softened, 227 g
  3. 3 T onion, grated
  4. 1/2 t salt
  5. 1/4 t garlic powder
  6. 2 T mayonnaise, 29 g
  7. crackers and/or fresh vegetables for serving


  1. Peel, grate, drain and squeeze as much moisture as you can out of the grated cucumber.
  2. Place the cucumber, cream cheese, grated onion, salt, garlic powder and mayonnaise in a food processor and pulse until combined.
  3. Allow the dip to chill for 1 hour or so to let the flavors blend
  4. Serve with crisp crackers and or fresh vegetables.
