Corned Beef and Swiss Football Sandwiches

    This is a great sandwich to serve at a football party!

    You can change the meat and the cheese to your liking!

Ingredients

  1. 24 square soft white dinner rolls, broken into squares of 4
  2. spicy brown mustard (enough to cover rolls)
  3. 1 1/4 lb deli corned beef, sliced thin (20 oz)
  4. 1 (1 lb) jar sauerkraut, rinsed, drained and squeezed dry
  5. 6 slices deli swiss cheese (about 1/3 lb)
  6. 8 T butter
  7. 4 T onions, finely chopped
  8. 1/2 T poppy seeds
  9. 4 T Worcestershire sauce
  10. 2 t garlic powder

Instructions

  1. Adjust oven rack to middle position and heat oven to 350°F.
  2. Slice 4 pack of rolls in half horizontally.
  3. Spread mustard on cut sides of roll bottoms.
  4. Arrange roll bottoms, cut side up and side by side, in 9x13 baking dish.
  5. Arrange corned beef slices on the roll bottoms.
  6. Divide sauerkraut among sandwiches.
  7. Arrange cheese over the sauerkraut.
  8. Place the lids of the buns on top.
  9. Combine butter, onion, and poppy seeds in a small saucepan. Heat until butter is melted and onion is softened, about 1-2 minutes.
  10. Whisk Worcestershire and garlic powder, into butter mixture until combined.
  11. Generously brush tops and edges of sandwiches with all of butter mixture. Spoon any remaining solids over sandwiches.
  12. Cover dish with aluminum foil and let sit for 10 minutes to allow sandwiches to absorb sauce.
  13. Bake for 20 minutes.
  14. Uncover and continue to bake until cheese is melted around edges and tops are slightly firm, 7 to 9 minutes.
  15. Let cool for 10 minutes.
  16. Sandwiches can be served in clusters of 4 or cut apart into individual sandwiches.
