Grilled Cheese Sandwich

    Grilled cheese makes a nice weekend lunch with a bowl of soup!


  1. 3 slices of cheese, such as American, Cheddar, Swiss, Monterey Jack, Colby, etc (mix and match- any combination)
  2. 4 slices white sandwich bread (½-inch-thick), such as Pepperidge Farm Toasting White, or Italiano Bread
  3. 1 T butter


  1. Heat a heavy 12-inch cast iron pan or skillet over low to medium-low heat.
  2. Meanwhile, arrange cheese on 2 bread slices.
  3. Top each with a remaining bread slice, pressing down gently to set.
  4. Melt butter in the pan, swirl to coat.
  5. Place sandwiches in the pan. Cook until crisp and deep golden brown, 5 to 10 minutes per side, flipping sandwiches back to first side to re-heat and crisp, about 15 seconds.
  6. Serve immediately.
