Roasted Beet and White Bean Hummus

    This can be served as a dip trio with Hummus and Roasted Garlic Kale Hummus! It is very festive for the Holidays!


  1. 1 medium beet, roasted
  2. 1 small clove garlic, roasted
  3. 1 (15 oz) can white beans, rinsed and drained
  4. 1 T mint, chopped
  5. 6 T tahini, stirred well
  6. 3 T extra virgin olive oil
  7. 2 T balsamic vinegar
  8. 1 t kosher salt
  9. 1/2 t ground pepper
  10. sliced green onions, cilantro or mint as garnish


  1. Preheat oven to 400°F.
  2. Wrap beet and garlic clove in aluminum foil and roast for 45 minutes.
  3. Remove from oven, unwrap and set aside to cool. Once cool, cut beet into several pieces.
  4. Mince garlic in food processor.
  5. Add beans, beet, tahini, olive oil, lemon juice, salt and pepper and process until smooth.
  6. Refrigerate until serving. Serve at room temperature.


    Leftover hummus can be frozen.
