Chicken with Honey Beer Sauce

Ingredients

  1. 2 t canola oil
  2. 4 (6 oz) skinless, boneless chicken breast halves
  3. 1/4 t pepper
  4. 1/8 t salt
  5. 3 T shallots, thinly sliced
  6. 1/2 c beer
  7. 2 T soy sauce, reduced sodium
  8. 1 T whole-grain Dijon mustard
  9. 1 T honey
  10. 2 T parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add oil to pan; swirl to coat.
  3. Sprinkle chicken evenly with pepper and salt.
  4. Add chicken to pan; saute 6 minutes on each side or until done.
  5. Remove chicken from pan; keep warm.
  6. Add shallots to pan; cook 1 minute or until translucent.
  7. Combine beer, soy suace, mustard, and honey in a small bowl; stir with a whisk.
  8. Add beer mixture to pan; bring to a boil, scraping pan to loosen browned bits.
  9. Cook 3 minutes or until liquid is reduced to 1/2 cup.
  10. Return chicken to pan; turn to coat with suace.
  11. Sprinkle evenly with parsley.
