Simple Syrup, Mint Infused

    This is nice to flavor iced tea, or mixed drinks!


  1. 1 c sugar
  2. 1 c water
  3. handful of mint sprigs, rinsed and dried, about 1/4 c


  1. Bring water and sugar to boil in a saucepan, stirring, until sugar is dissolved.
  2. Place the mint leaves in a glass container, pour the simple syrup over them and allow the mixture to cool (the longer the better for the best minty flavor).
  3. Refrigerate overnight, if possible.
  4. Remove the mint from the syrup, by straining, store in refrigerator till needed.
