Picnic Potatoes

  1. 8 to 10 medium potatoes, peeled and cut into wedges
  2. 1 1/2 c ranch dressing
  3. 2 c sharp Cheddar cheese, shredded
  4. 1/8 t salt
  5. 1/8 t pepper
  6. 1/2 lb sliced bacon, cooked and crumbled, divided
  7. chives, minced


  1. Preheat oven to 350°F.
  2. Place potatoes in a large saucepan and cover with water.
  3. Bring to a boil.
  4. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain.
  5. #Transfer to a large bowl; mash (do not add milk, butter or seasoning).

  6. Stir in ranch dressing.
  7. Add the cheese, salt, pepper and half of the bacon.
  8. Spread into a greased 9x13 baking dish.
  9. Sprinkle with chives and remaining bacon.
  10. Bake, uncovered, at 350°F for 20 minutes or until heated through.
