Bacon Jam for Burgers

Ingredients

  1. 12 slices bacon, diced
  2. 1 T canola oil
  3. 1 large onion, diced
  4. 1 T white wine vinegar
  5. 1 sprig thyme, leaves stripped
  6. kosher salt to taste
  7. black pepper to taste

Instructions

  1. Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes.
  2. Remove to paper towels; pour off all but 3T drippings from the skillet.
  3. Add the canola oil to the skillet and heat over low heat.
  4. Add the onion; cover and cook 10 minutes.
  5. Uncover and cook, stirring occasionally, until very soft, 10 to 15 more minutes.
  6. Return the bacon to the skillet; add the white wine vinegar and thyme and season with salt and pepper. Set aside.
