Pre-Notes

    In Pittsburgh, the gyro meat slices can be purchased in Stamoolis Brothers Co. in the Strip District. They are delicous and easy to prepare.

Ingredients

    Sauce

  1. 1 recipe of Tzatziki Sauce
  2. Meat

  3. 1 lb gyro meat, cooked and sliced (from Greek grocer)
  4. Alternate Beef Meat Patties

  5. 1/2 medium onion, chopped coarse (about 3/4 c)
  6. 1 T lemon juice
  7. 1/2 t salt
  8. 2 T oregano leaves, minced
  9. 3 medium garlic cloves, minced, (about 3 t)
  10. 1 lb 80% lean ground chuck
  11. 1 T vegetable oil
  12. Gyro

  13. 4 (8 in) pita breads, 1/4 top of pitas reserved is using alternate meat recipe
  14. 1 large tomato, sliced thin
  15. 2 c iceberg lettuce, shredded
  16. 2 oz feta cheese, crumbled (about 1/2 c)
  17. 1/2 red onion, sliced thin

Instructions

    Sauce

  1. Prepare Tzatziki Sauce, refrigertate until serving.
  2. Meat

  3. Heat gyro meat slices in large skillet, until heated through, do not overcook.
  4. Alternate Beef Meat Patties

  5. Adjust oven rack to middle position and heat oven to 350°F.
  6. Cut top quarter off each pita bread. Tear quarters into 1 inch pieces. (You should have 3/4 c pita pieces).
  7. Stack pitas and tightly wrap with aluminum foil.
  8. Process onion, lemon juice, salt, pepper, oregano, garlic, and pita pieces in food processor until smooth paste forms, about 30 seconds.
  9. Transfer the onion mixture to large bowl; add beef and gently mix with hands until thoroughly combined.
  10. Divide mixture into 12 equal pieces and roll into balls.
  11. Gently flatten balls into round discs, about 1/2 inch thick and 2 1/2 inches in diameter.
  12. Place foil wrapped pitas directly on oven rack and heat for 10 minutes.
  13. Meanwhile, heat oil in 12 inch nonstick skillet over medium-high heat until just smoking.
  14. Add patties and cook until well browned and crust forms, 3 to 4 minutes.
  15. Flip patties, reduce heat to medium and cook until well browned and crust forms on second side, about 5 minutes longer.
  16. Transfer patties to paper towel-lined plate.
  17. Gyro

  18. Spread Tzatziki Sauce inside each pita.
  19. Divide meat slices or patties evenly among pitas.
  20. Top with lettuce, tomatoes, onions and feta cheese.
  21. Serve immediately.
  22. Alternate Beef Meat Cooking Method

  23. Meat can be rolled into 4 logs, flattened and cooked on the grill until crust forms, about 8 to 10 minutes.
  24. Pitas can also be warmed on the grill.
