Shrimp Scampi Zucchini Fettuccine

  1. 4 t olive oil
  2. 1 lb raw shrimp, cleaned with tail off
  3. 2 T raw garlic, minced
  4. 6 T white wine
  5. 2 T lemon juice
  6. 2 T butter
  7. 1 lb thinly sliced zucchini strips
  8. 1/2 t salt
  9. 1/2 t pepper
  10. 4 oz fettuccine, cooked
  11. 4 t flat parsley, chopped
  12. 1/4 c Parmesan cheese, grated, more for garnish


  1. Heat olive oil in a large nonstick skillet over medium high flame.
  2. Add shrimp and saute until pink. Remove shrimp and set aside.
  3. Add garlic to pan; saute for 1 minute.
  4. Stir in wine, lemon juice, and butter; bring to a simmer.
  5. Add zucchini, salt and pepper; steam until al dente. About 3 minutes.
  6. Return shrimp to pan to heat through.
  7. Add cooked fettuccine; toss to combine.
  8. Add the parsley and Parmesan; toss again.
  9. For serving; transfer to two plates and sprinkle with additional Parmesan cheese.
  10. Serve immediately.
