    This mayonnaise can be stored in the refrigerator for about 5 days.


  1. 2 egg yolks
  2. 1 T lemon juice, plus 1 t
  3. 1/4 t Dijon mustard
  4. 1/8 t sugar
  5. 1/4 t salt
  6. ground white pepper (if available, otherwise black), to taste
  7. 3/4 c canola oil (or other vegetable oil)


  1. In food processor, combine yolks, lemon juice, mustard, sugar, salt, and pepper until combined, about 10 seconds.
  2. With machine running, gradually add oil in slow steady stream (process should take about 30 seconds); scrape down sides of bowl with rubber spatula and process 5 seconds longer.
  3. Adjust seasoning with additional salt and pepper, if needed.
