Greek Chicken Kabobs

    This recipe is good served with Greek Rice.


  1. 1 (8 oz) container greek yogurt, such as Fage
  2. 1/3 c crumbled feta cheese with basil and sundried tomatoes
  3. 1/2 t lemon zest
  4. 2 T lemon juice
  5. 2 t dried oregano (greek if available)
  6. 1/2 t salt
  7. 1/4 t black pepper
  8. 1/4 t crushed dried rosemary
  9. 1 lb skinless, boneless chicken breast halves, cut into 1 inch pieces
  10. 1 large red onion, cut into wedges
  11. 1/2 large green bell pepper, cut into 1 1/2 inch pieces
  12. 1/2 large red bell pepper, cut into 1 1/2 inch pieces
  13. cherry tomatoes
  14. wooden skewers


  1. In a gallon-size zipper bag, mix the yogurt, feta cheese, lemon zest, lemon juice, oregano, salt, pepper, and rosemary.
  2. Place the chicken in the bag and mix to coat.
  3. Marinate in the refrigerator for 3 hours.
  4. Soak wooden skewers in water for at least 1 hour.
  5. Preheat the grill.
  6. Thread the chicken, onion wedges, bell peppers, and tomatoes alternately onto skewers. Discard the remaining yogurt mixture.
  7. Grill skewers on the grill until the chicken is no longer pink and juices run clear.
