Greek Rice

    This recipe is good served with Greek Chicken Kabobs.


  1. 2 T olive oil
  2. 1/2 c onion, chopped
  3. 1 t garlic, minced
  4. zest from 1 lemon
  5. 1/2 t ground cumin
  6. 8 oz baby spinach, chopped
  7. 1 c basmati rice
  8. 2 c chicken broth
  9. 4 t fresh dill, chopped and divided
  10. 1/2 t salt
  11. fresh ground black pepper
  12. juice from 1 lemon


  1. Heat olive oil in a medium pan with a tightly fitting cover over medium high heat.
  2. Saute onions until translucent (about 5 to 7 minutes).
  3. Add garlic and saute for another minute.
  4. Add the lemon zest, cumin and spinach and cover the pan. Cook until the spinach wilts down (about 3 to 5 minutes).
  5. Stir in the rice, chicken broth, 2 T dill, salt and pepper into the spinach mixture and stir to combine.
  6. Bring to a boil.
  7. Reduce heat to simmer, repacing the lid on the pan, and cook until the rice is tender (about 15 to 20 minutes).
  8. Stir in the lemon juice and the remaining dill before serving.
