  1. 1 c sugar
  2. 1 c water
  3. 4 to 5 slices of peeled ginger
  4. 15 whole allspice, coarsely crushed


  1. Bring water, sugar, ginger, and allspice to boil in a saucepan, while stirring, until sugar is dissolved.
  2. Allow ginger and allspice to steep for 10 minutes.
  3. Strain syrup through cheesecloth or a paper towel.
  4. Cool to room temperature and transfer to a jar, then refrigerate.
