Tzatziki Sauce

    This dip can be made 2 days in advance and stored in an airtight container.


  1. 1 medium cucumber, peeled, halved lengthwise and seeded
  2. 1 c plain whole-milk Greek yogurt
  3. 2 T extra virgin olive oil
  4. 2 T finely chopped fresh mint leaves and/or dill leaves
  5. 1 small garlic clove, minced (1/2 t)
  6. 1/2 t pepper
  7. 1/4 t salt


  1. Shred the cucumber in a food processor with the large hole disc, set aside.
  2. Whisk the yogurt, oil, mint, and garlic together in a medium bowl.
  3. Stir in the cucumbers and season with salt and pepper to taste.
  4. Cover and refrigerate until chilled, about 1 hour.
