Sweet Pea Dip

    This dip can be made as part of a dip trio, with Hummus and Roasted Red Pepper Hummus.

    This dip can be made 2 days in advance and stored in an airtight container.


  1. 2 c fresh or frozen peas
  2. salt
  3. 1 c ricotta cheese
  4. zest of 1/2 lemon
  5. 1/2 c Parmesan cheese
  6. 2 t fresh mint, chopped
  7. black pepper
  8. 2 T extra virgin olive oil
  9. grilled bread for serving


  1. Add the peas to a large pot of well salted boiling water.
  2. Boil the peas for about 30 seconds.
  3. Remove the peas to an ice bath.
  4. In a food processor, combine the ricotta, lemon zest, Parmesan, mint, and salt to taste.
  5. Drain the peas and add them to the food processor.
  6. Pulse just until the mixture comes together; keeping a little texture and not making it totally smooth.
  7. Spoon the mixture into a serving bowl, crack some pepper over the top and drizzle with olive oil.
  8. Serve the pea dip with grilled bread.
