Cantaloupe & Apricot Granita

  1. 1/4 c sugar
  2. 10-12 mint leaves
  3. 1/4 c water
  4. 1 lb cantaloupe, chopped, plus 6 small wedges for garnish
  5. 1/4 c apricot preserves
  6. pinch of salt


  1. In a saucepan, bring sugar, mint, and water to a boil.
  2. Strain, discard mint.
  3. In blender, puree syrup with chopped cantaloupe, preserves, and a pinch of salt; transfer to a 9x13 inch glass dish.
  4. Freeze until firm, stirring every 30 minutes, to form ice crystals.
  5. Scrape with fork; divide among glasses.
  6. Garnish with cantaloupe wedges.
