Jamaican Rice and Peas (Beans)

    Many Jamaican people refer to kidney beans as peas. This makes for a confusing recipe name!

Ingredients

    White Rice Version

  1. 2 c long grain white rice
  2. 12 oz coconut water
  3. 20 oz water
  4. 1 (15 oz) can dark red kidney beans, rinsed and drained
  5. 1 t dried thyme
  6. 1/2 t lime zest
  7. 1/4 c green onions, chopped
  8. salt
  9. freshly grated black pepper
  10. Instant Rice Version (variation of ingredients)

  11. 2 c instant white rice
  12. 10 oz water

Instructions

    White Rice Version

  1. In a medium saucepan add, coconut water, water, beans, thyme, and lime zest, bring to a boil.
  2. Add white rice.
  3. Cover, reduce heat and simmer for 20 minutes or until liquid is absorbed.
  4. Fold in green onions and season to taste with salt and pepper.
  5. Serve rice, immediately.

  7. In a medium saucepan add, coconut water, water, instant rice, beans, thyme, and lime zest, bring to a boil.
  8. Reduce heat to low, cover and simmer 5 minutes, or until liquid is absorbed.
  9. Fold in green onions and season to taste with salt and pepper.
  10. Serve rice, immediately.
