Shredded Beef Sandwich (slow cooker)

    Recipe can be made the day ahead, refrigerated and the excess fat can be removed before reheating.

Ingredients

  1. 1 (2 1/2 to 3 1/2 lb) lean chuck roast, trim fat and cut into small chunks
  2. 1 large onion, quartered and thinly sliced
  3. 1 (1 oz) envelope onion soup mix
  4. 3 cloves garlic, minced
  5. 1 (10.5 oz) can tomato soup
  6. 1/4 c brown sugar
  7. 2 T Worcestershire sauce
  8. 1 T lemon juice
  9. 1 T Dijon mustard
  10. 1/2 t celery seed
  11. 1/4 t ground black pepper
  12. salt to taste
  13. 6 Buns

Instructions

  1. Place beef in slow cooker.
  2. Combine onions, onion soup mix, garlic, tomato soup, brown sugar, Worcestershire sauce, lemon juice, mustard, celery seed, pepper, and salt, and pour into slow cooker.
  3. Cook on Low: 8 to 10 hours or on High: 4 to 5 hours.
  4. Remove beef, and shred.
  5. Pour juice into a saucepan, simmer for 15 to 20 minutes to thicken.
  6. Return beef to sauce.
  7. Serve on buns.
