XX Cheese Dip

Pre-Notes

    This dip can be made in a fondue pot to keep it warm during serving.

Ingredients

  1. 11 oz Cheddar cheese, shredded (2 3/4 c)
  2. 3 T flour
  3. 8 oz Dos Equis Lager, more if needed
  4. 1 (14.5 oz) can fire roasted diced tomatoes, drained
  5. 1 large jalapeno, diced finely
  6. 1 t ground pepper
  7. tortilla chips for dipping

Instructions

  1. Fill a large saucepan with 2 inches of water and bring to a boil.
  2. Place shredded cheese in a bag and toss with flour to coat.
  3. Place a bowl over the pan, to make a double boiler.
  4. Add beer, tomatoes, and jalapeno to bowl, cook 30 seconds.
  5. Stir in 1/2 of the cheese and cook until cheese is melted.
  6. Add remaining cheese a small amount at a time, stirring constantly until cheese is melted.
  7. Stir in pepper.
  8. If dip is too thick, add a little more beer to thin it.
  9. Serve hot with tortilla chips.
