Cranberry Muffins

Ingredients

    Cranberry Mixture

  1. 1 c ground fresh cranberries
  2. 1/2 c sugar
  3. Milk Mixture

  4. 3/4 c milk
  5. 1 1/2 t vinegar or lemon juice
  6. 1 t orange zest
  7. Creamed Mixture

  8. 1/4 c sugar
  9. 1/4 c shortening
  10. 1 egg
  11. Dry Mixture

  12. 2 c flour
  13. 1/2 t salt
  14. 3/4 t baking soda
  15. Topping

  16. 1/2 c sugar
  17. 1/2 t cinnamon

Instructions

  1. Preheat oven to 400°F.
  2. Grease and flour 2 muffin pans, and set aside.
  3. Cranberry Mixture

  4. Mix the cranberries with sugar. Set aside.
  5. Milk Mixture

  6. Combine the milk, vinegar or lemon juice and orange zest, let sit for about 5 minutes.
  7. Cream Mixture

  8. Cream sugar with shortening.
  9. Beat in the egg.
  10. Dry Mixture

  11. Sift together the flour, salt, and baking soda, and add to the creamed mixture, along with the cranberry mixture.
  12. Add the milk mixture.
  13. Stir just enough to mix.
  14. Spoon the batter into prepared muffin pans.
  15. Topping

    Mix together sugar and cinnamon.

  16. Sprinkle over each muffin.
  17. Bake in 400°F oven for 20 to 25 minutes. If making mini-muffins, bake for about 14 minutes.
