Sweet Potato Cakes and Mojito Sauce

Ingredients

    Mojito Sauce

  1. 1/4 c olive oil
  2. 3 t orange juice
  3. 2 T lime juice
  4. 1 T cilantro, finely chopped
  5. Sweet Potato Cakes

  6. 3 sweet potatoes, peeled and cooked (steamed or microwaved)
  7. 1 T vegetable oil
  8. 1/2 onion, finely chopped
  9. 1/2 jalapeno pepper, seeded and finely chopped
  10. 2 garlic cloves, minced
  11. salt
  12. pepper
  13. 1 1/2 c bread crumbs
  14. 1 c cornmeal
  15. 1 c vegetable oil, for frying

Instructions

    Mojito Sauce

  1. Combine all ingredients in a small bowl, set aside.
  2. Sweet Potato Cakes

  3. In a skillet over meduim-high heat, add oil.
  4. When oil shimmers, add onion, jalapeno, and garlic and cook until the onion is soft, about 3 minutes.
  5. Season with salt and pepper and set aside.
  6. Place the sweet potatoes in a large bowl and mash.
  7. Stir in the onion mixture and bread crumbs.
  8. Season with salt and pepper.
  9. Using your hands form the mixture into little cakes. (silver dollar sized works best)
  10. Flatten cakes and dredge in cornmeal.
  11. In a large skillet, heat oil.
  12. Working in batches, fry each cake till golden brown, and then transfer to paper towels.
  13. Season with salt and pepper.
  14. Serve Sweet Potato Cakes with Mojito Sauce.
