Hawaiian Chicken (coconut version)

  1. 3 lbs of bonesless skinless chicken thighs or breasts
  2. 1/2 c soy sauce, reduced sodium
  3. 1/2 c water
  4. 3/4 c brown sugar
  5. 1/2 bunch of green onions, (reserve the other half for garnish)
  6. 1/2 t garlic, minced
  7. 1 t sesame oil
  8. 1/2 of a (13.5 oz) can of coconut milk (reserve other half for coconut rice)
  9. Coconut Rice

  10. prepare white rice according to package directions, except replace 7 oz of the water required with remaining coconut milk.


  1. Mix soy sauce, water, brown sugar, onions, garlic, sesame oil, and coconut milk in a large zipper lock bag.
  2. Add chicken and marinade for at least 8 hours or overnight.
  3. Grill chicken on low heat, so that marinade does not burn.
  4. Serve chicken on platter of coconut rice and garnish with remaining green onions.
