Hawaiian Chicken (pineapple version)

Ingredients

  1. 1/4 c pineapple juice
  2. 2 T ketchup
  3. 2 T soy sauce, reduced sodium
  4. 1 1/2 t minced peeled ginger
  5. 2 garlic cloves, minced
  6. 4 (6 oz) skinless, boneless chicken breast halves
  7. cooking spray
  8. 3/4 t salt, divided
  9. 2 c hot cooked long-grain white rice, cooked to package directions
  10. 1/4 c fresh cilantro, chopped

Instructions

  1. Combine pineapple juice, ketchup, soy sauce, ginger, and garlic.
  2. Reserve 1/4 c marinade; place remaining marinade in a zipper lock plastic bag.
  3. Add chicken to bag; seal. Chill 4 hours.
  4. Preheat grill.
  5. Remove chicken from bag, discard marinade.
  6. Season chicken with salt and pepper to taste.
  7. Cook on grill; baste with reserved marinade.
  8. Combine cooked rice, 1/4 t salt, and cilantro, mix well.
  9. Serve chicken over rice.
