Fondue Meal (Melting Pot Style)

    We enjoy having fondue night as a family!

    While any style fondue pot can be used, I find that an electric fondue pot holds the heat better for cooking the entree portion of the meal.

    A fondue pot with a ceramic insert over a water bath works well for preventing the cheese and chocolate from burning.

Ingredients

    Cheese Fondue

  1. 1 recipe Swiss Fondue
  2. Salad

  3. a green salad of your choice
  4. Cooking Style

  5. 1 recipe Coq Au Vin Cooking Style for Fondue or 1 recipe Mojo Cooking Style for Fondue
  6. Dipping Sauces

  7. 1 recipe Teriyaki Dipping Sauce, or bottled teriyaki sauce
  8. 1 recipe Green Goddess Dip
  9. 1 recipe Curry Yogurt Dip
  10. 1 recipe Island Sauce
  11. 1 recipe Spicy Thai Peanut Sauce
  12. Entree Items, cut into bite sized pieces

  13. filet mignon
  14. 1 recipe Teriyaki Marinade for teriyaki marinated filet mignon or or chicken breast
  15. chicken breast
  16. shrimp
  17. small pierogies or ravioli
  18. Side items

  19. mushrooms
  20. broccoli florets
  21. small potatoes
  22. Dessert Fondue

  23. 1 recipe Chocolate Fondue

Instructions

    Cheese Fondue

  1. Prepare cheese fondue and serve with desired accompaniments.
  2. Cooking Style

  3. Select and prepare a cooking style.
  4. Place in fondue pot.
  5. Dipping Sauces

  6. The dipping sauces should be prepard in advance (the day before if possible), and spooned into individual very small bowls or in the compartments of a fondue plate.
  7. Entree items

  8. Individual plates for each diner, should be prepared containing a few pieces of each raw meat and pierogies or ravioli. NOTE: This plate is only to be used as a holding plate for the raw foods. To avoid contamination, no cooked foods or sauces should be placed on this plate.
  9. Side items should be placed in bowls near the fondue pot, to be shared by all of the diners.
  10. Cooking the Meal

  11. The temperature of the cooking broth may fluctuate when foods are placed in the pot. Adjust temperature to ensure that the broth is simmering.
  12. A few of the side items should be placed in the pot to cook. They will take about 3-4 minutes to cook and can be removed with the 'rescue spoon', (a slotted spoon).
  13. Spear a piece of meat with the tip of your fondue fork, place in the cooking broth. It will take about 2 minutes for chicken and about 1 1/2 minutes for all other items. It is good to have 2 fondue forks per person (if possible) to make the dining experience move more quickly.
  14. Remove cooked meat on fork and transfer to your fondue plate. Dip the item in your favorite sauce, and enjoy.
  15. Dessert Fondue

  16. Prepare chocolate fondue and serve with desired accompaniments.
