Hush Puppies

    These Hush Puppies are great served with Cinnamon Butter!


  1. 1 c yellow cornmeal
  2. 1 c flour
  3. 3 t baking soda
  4. 1/2 t salt
  5. 1 1/2 t sugar
  6. 1 small onion, grated
  7. 1 (15 oz) can creamed corn
  8. 2 eggs
  9. 1 quart peanut or vegetable oil for frying


  1. In a mixing bowl, combine cornmeal, flour, baking soda, salt and sugar.
  2. In a separte mixing bowl, combine onion, corn, and eggs.
  3. Combine flour mixture with corn mixture. If the batter is too runny, add more cornmeal until it can hold its shape.
  4. Heat 2 inches of oil to 365°F.
  5. Drop batter into the oil by the spoonful and cook on both sides until browned.
  6. Remove from oil, place on paper towels and serve.
  7. Freezing Instructions

  8. Cool hush puppies.
  9. Flash freeze and transfer to freezer bags.
  10. Reheating Instructions

  11. Place frozen hush puppies on baking sheet and bake at 425°F for 14 to 16 minutes. Turn once after 7 minutes.
