Butter Bean and Sweetcorn Soup

Ingredients

  1. 1/2 oz butter
  2. 1 onion, chopped
  3. 2 celery stalks, diced
  4. 1 garlic clove, crushed
  5. 10 oz milk
  6. 10 oz chicken broth, reduced sodium
  7. 10 oz sweet corn
  8. 1 (15 oz) can butter beans (small lima beans), drained
  9. 1 t fresh thyme, chopped plus some for garnish
  10. 3 oz sharp Cheddar cheese, grated, divided

Instructions

  1. Melt butter, in a saucepan.
  2. Add onions, celery and garlic and saute gently for 5 minutes until softened.
  3. Add milk, broth, corn, beans, and thyme and bring to a boil
  4. Reduce heat and simmer gently for 10 minutes.
  5. Stir in the 2 oz of cheese and heat gently.
  6. Serve in bowls and garnish with remaining cheese and thyme.
