Classic Tomato Sauce (Meatball Shop)

  1. 1/4 c olive oil
  2. 1 onion, finely diced
  3. 1 bay leaf
  4. 1 t chopped fresh oregano or 1/2 t dried
  5. 2 garlic cloves, minced
  6. 1 1/2 t salt
  7. 2 T tomato paste
  8. 2 (26 oz) boxes Pomi chopped tomatoes or 2 (28 oz) cans whole plum tomatoes, chopped with their liquid


  1. Heat olive oil in a large pot over medium heat.
  2. Add the onions, bay leaf, oregano, garlic, and salt and cook, stirring often, until onions are soft and translucent, about 10 minutes.
  3. Add the tomato paste and continue cooking for 5 minutes.
  4. Add the tomatoes and stir constantly until the sauce begins to boil.
  5. Lower the heat and simmer for 1 hour, stirring every 5 minutes or so to prevent the sauce on the bottom of the pot from burning.
  6. Remove bay leaf before serving.
