Cilantro Lime Rice

  1. 2 c water
  2. 1 T butter
  3. 1 c long-grain white rice
  4. 1 t lime zest
  5. 2 T fresh lime juice
  6. 1/2 c cilantro, chopped


  1. Bring water to a boil; stir butter and rice into water.
  2. Cover, reduce heat to low; and simmer until rice is tender for 20 minutes.
  3. Stir lime zest, lime juice, and cilantro into cooked rice just before serving.
