Turkey Reubens

  1. 1 c finely shredded green cabbage (or one bag of coleslaw mix)
  2. 2 T Thousand Island dressing
  3. 1 T mayonnaise
  4. 1 T Dijon Mustard
  5. 12 slices of rye bread
  6. 6 slices of Swiss cheese
  7. 12 oz thinly sliced cooked turkey breast
  8. cooking spray


  1. Combine cabbage, dressing, mayonnaise, and mustard; set aside.
  2. Top 6 bread slices with 1 slice cheese each.
  3. Top evenly with turkey. Spoon cabbage mixture evenly over turkey, and top with remaining 6 bread slices.
  4. Coat both sides of each sandwich with cooking spray.
  5. Coat a griddle or large skillet with cooking spray; place over medium-high heat until hot.
  6. Place sandwiches on griddle; cook 2 minutes on each side or until bread is lightly browned and cheese melts.
  7. Serve immediately.
