Ham and Cheese Rye Muffins

Ingredients

  1. 1 1/4 c flour
  2. 1/3 c rye flour
  3. 2 t baking powder
  4. 2 t sugar
  5. 1/4 t caraway seed
  6. 1/4 t onion salt
  7. 1 egg, beaten
  8. 3/4 c milk
  9. 1/4 c vegetable oil
  10. 3 oz cooked ham, finely chopped (2/3 c)
  11. 5 oz Swiss or Gruyere cheese, shredded, divided (1 1/4 c)

Instructions

  1. Preheat oven to 400°F.
  2. Lightly grease 12 ( 2 1/2 inch) muffin cups or line with paper baking cups; set aside.
  3. In medium bowl stir flour, rye flour, baking powder, sugar, caraway seed, and onion salt.
  4. Make a well in the center.
  5. In a small mixing bowl, combine egg, milk and oil; add all at once to flour mixture.
  6. Add ham and 3/4 c cheese.
  7. Stir just until moistened. This batter should be lumpy.
  8. Spoon batter into prepared muffin cups, filling each 2/3 full.
  9. Bake in 400°F oven about 20 minutes or until golden brown.
  10. Sprinkle with remaining 1/2 c cheese.
  11. Bake about 1 minute more, or till cheese is melted.
  12. Remove from pans; cool slightly on racks.

    These muffins freeze well, and can be reheated.
