Pre-Notes

    My Aunt, Kathleen, gave me this recipe many years ago. It is still one of my favorites, I like to make this for Christmas morning!

Ingredients

  1. 16 oz mushrooms, chopped
  2. 1/2 onion, diced
  3. 1 T unsalted butter
  4. 16 oz breakfast sausage, cooked and blotted with paper towel
  5. 6 eggs
  6. 8 oz sharp Cheddar cheese, shredded
  7. 2 (8 oz) pkgs cream cheese, cubed
  8. 1/3 c milk or half-and-half

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9x13 inch baking dish. Set aside.
  3. In a large skillet, saute mushrooms and onions in butter, until tender; set aside.
  4. In blender, add eggs, Cheddar cheese, cream cheese, and milk, process until smooth and fluffy.
  5. Stir in mushroom mixture and cooked sausage.
  6. Pour into prepared pan.
  7. Bake at 350°F for 30-40 minutes until lightly brown on top.
