Miniature Holiday Cherry Cheesecakes

Ingredients

  1. 18 vanilla wafers, crushed
  2. 3 (8 oz) pkgs cream cheese, softened
  3. 3/4 c sugar
  4. 1 T lemon juice
  5. 1 1/4 t grated lemon zest
  6. 3/4 t vanilla extract
  7. 3 eggs
  8. 1 (20 oz) can cherry pie filling

Instructions

  1. Preheat oven to 325°F.
  2. Place 1/2 t crushed vanilla wafers, on bottom of each of paper-lined baking cup, placed in mini muffin tins. If using foil cups, the mini muffin tin is not needed.
  3. Combine cream cheese, sugar, lemon luice, zest, and vanilla, mixing at medium speed on electric mixer until well blended.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Pour into baking cups, filling each cup almost full.
  6. Bake at 325°F for 20 minutes.
  7. Chill.
  8. Top each cheesecake with cherry pie filling.
  9. Refrigerate till serving.
