Thumbprint Cookies

    Beth, Dee and I, all make these cookies at Christmas time. Beth's are always the best!



  1. 1/2 c butter flavor Crisco
  2. 1/2 c butter, softened
  3. 1/2 light brown sugar, packed
  4. 2 egg yolks, reserve whites for dipping
  5. 1 t vanilla
  6. 2 c flour
  7. 1/2 t salt
  8. chopped walnuts for rolling
  9. Icing

  10. 1 c sifted powdered sugar
  11. 1/4 t salt
  12. 1/2 t almond extract
  13. 2 1/2 T whole milk, or 1 1/2 T cream or water
  14. paste food coloring



  1. Cream shorteing and butter, add brown sugar, mix well.
  2. Add egg yolks and vanilla, mix well.
  3. Combine flour and salt and add all at once; blend throughly.
  4. Refrigerate dough for 1 hour.
  5. Roll dough into 1 inch balls, by hand.
  6. Drop balls into egg whites, roll in chopped nuts.
  7. Place balls on baking sheet and bake in 375°F oven for 5 minutes, remove from oven.
  8. Imprint a thumb into the center of each cookie, bake an additional 8 to 10 minutes.
  9. Cool cookies on wire rack.
  10. Place a small spoonful of icing into the center indent of each cookie.
  11. Icing

  12. Combine all ingredients, mix well.
  13. Add a small amount of paste food coloring to achieve desired color, mix well.
