Poppy Seed Chicken

  1. 3 cups cooked chicken breast, cubed, or rotisserie chicken
  2. 2 (10.5 oz) cans cream of chicken soup, undiluted
  3. 1 c (8 oz) sour cream, 240 g
  4. 2 t poppy seeds
  5. 1 c Ritz crackers, crushed (about 25 crackers)
  6. 3 T butter, melted
  7. 1/3 c grated Parmesan cheese, 78 g
  8. cooking spray


  1. Preheat oven to 350°F.
  2. In a large bowl, combine the chicken, soup, sour cream, and poppy seeds.
  3. In a small bowl, combine cracker crumbs, and butter, set aside 1/2 c for topping.
  4. Stir remaining crumbs into chicken mixture.
  5. Transfer chicken mixture to an 11x7 inch baking dish, coated with cooking spray.
  6. Top with reserved crumbs; sprinkle with cheese.
  7. Bake uncovered, at 350°F for 30 to 35 minutes or until bubbly.
