Chocolate Chip Cookies

Ingredients

  1. 1 c rolled oats, ground fine in food processor
  2. 1 c flour
  3. 1/2 t baking powder
  4. 1/2 t baking soda
  5. 1/2 t salt
  6. 4 oz unsalted butter, softened but firm (1 stick)
  7. 1/2 c brown sugar, packed
  8. 1/2 c sugar
  9. 1 egg
  10. 1/2 t vanilla
  11. 1/2 c coconut, shredded
  12. 6 oz semi sweet chocolate chips, such as Ghirardelli
  13. 2 oz semi sweet chocolate, finely chopped
  14. 3/4 walnuts or pecans, chopped
  15. parchment paper

Instructions

  1. Preheat oven to 350°F.
  2. In medium bowl whisk ground oats, flour, baking powder, baking soda and salt together. Set aside.
  3. In a large bowl, on medium speed, beat butter, brown sugar, and sugar for 3 minutes, scrape down.
  4. Add egg and vanilla, beat for 40 seconds, scrape down.
  5. On low speed, add dry ingredients, mix for 30 to 45 seconds.
  6. Stir in chocolate chips, chocolate pieces, coconut and nuts if using; mix well.
  7. Place 2 T of dough on parchment lined cookie sheets, until all of the dough is used.
  8. Bake at 350°F for 15 to 18 minutes.
  9. Remove from oven, let rest for 2 minutes.
  10. Transfer to cooling rack.
