Cherry Cobbler

  1. 1 c butter, softened
  2. 1 1/2 c sugar
  3. 4 eggs
  4. 2 c flour
  5. 1 t baking powder
  6. 1 T lemon extract
  7. 1 (20 oz) can cherry pie filling
  8. vanilla ice cream for serving (optional)


  1. Preheat oven to 350°F.
  2. Grease and flour a 9x13 inch baking dish, set aside.
  3. Cream butter and sugar at medium speed, until fluffy.
  4. Add eggs, one at a time.
  5. Add lemon extract.
  6. Combine flour and baking powder and stir into egg mixture.
  7. Spread into the prepared baking pan.
  8. Spoon on, cherry pie filling.
  9. Bake at 350°F for 45 minutes.
  10. Cool slightly and serve with vanilla ice cream, if desired.
