Chicken Pozole (slow cooker)

    This thinner stew is good served with a crusty bread.

Ingredients

  1. 2 garlic cloves, minced
  2. 1 1/4 lb chicken breasts, cut into 1 inch pieces
  3. 1 (15.5 oz) can white hominy, drained
  4. 1 (15.5 oz) can yellow hominy, drained
  5. 1 medium onion, chopped
  6. 1 t oregano
  7. 1/2 t cumin
  8. 1/4 t red pepper flakes
  9. 4 chicken bouillon cubes
  10. 4 cups water, 946 g
  11. 1/4 t pepper
  12. 1 (14.5oz) can diced tomatoes with jalapenos
  13. 1 T lime juice
  14. optional toppings: sliced radishes, sliced avocado, tortilla strips

Instructions

  1. In a slow cooker, combine the garlic, chicken breasts, white hominy, yellow hominy, onion, oregano, cumin, red pepper flakes, bouillon cubes, water, and pepper.
  2. Cook on High for 3 to 5 hours.
  3. Stir in tomatoes and lime juice.
  4. To with desired toppings, (optional).
