Apple Cake

    This recipe was made by Mrs. Guiser, Natalie's teacher, during an International Food Day Picnic.

Ingredients

  1. 4 T butter, softened
  2. 1 c sugar
  3. 1 egg, beaten, room temperature
  4. 4 granny smith apples, cored, peeled and diced (2 c)
  5. 1 t vanilla extract
  6. 1/2 t baking powder
  7. 1/2 t baking soda
  8. 1/2 t salt
  9. 1/2 t ground nutmeg
  10. 1 1/4 c flour
  11. 1/4 c butterscotch or cinnamon chips for topping
  12. whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 8 inch square pan
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Add the egg, apples, and vanilla; stir well.
  5. In a medium bowl, combine flour, baking soda, baking powder, salt and nutmeg.
  6. Stir into egg mixture.
  7. Pour the batter into the prepared pan.
  8. Top batter with butterscotch chips, pressing lightly into the batter.
  9. Bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean
  10. Remove from oven and let the cake sit in the pan for 5 minutes, then remove from pan.
  11. Serve warm or at room temperature with whipped cream or vanilla ice cream, if desired.
