Groundhog Cookies

Ingredients

  1. 2 cups flour
  2. 1/2 t salt
  3. 1/2 t baking soda
  4. 1 t baking powder
  5. 1 t ground ginger
  6. 1 t ground cloves
  7. 1 1/2 t cinnamon
  8. 1/2 c butter, softened
  9. 1 c sugar
  10. 1/2 c molasses
  11. 1 egg yolk
  12. raisins

Instructions

  1. Peheat oven to 350°F.
  2. Sift the flour into a medium bowl.
  3. Add salt, baking soda, baking powder, ginger, cloves, and cinnamon, whisk to combine.
  4. In a medium bowl, cream butter and sugar until fluffy with an electric mixer.
  5. Blend in molasses and the yolk.
  6. Stir in flour mixture and mix well.
  7. Form into 2 balls. Wrap the dough in plastic wrap and refrigerate overnight, several nights or freeze.
  8. Place a small amount of dough on a sheet of plastic wrap, and cover with plastic wrap.
  9. Roll to 1/8 inch thickness.
  10. Cut cookies with lightly floured cutter.
  11. Place cookies on greased baking sheet.
  12. Decorate with raisin eyes.
  13. Bake 8 to 10 minutes, cool slightly before removing from baking sheets.
  14. Total dough makes about 40 to 42, large groundhogs (about 4 inches tall)
