Amaretto Peach Cheesecake

Ingredients

    Crust

  1. 3 T margarine
  2. 1/3 c sugar
  3. 1 egg
  4. 3/4 c flour
  5. Filling

  6. 3 (8 oz) pkgs cream cheese, softened
  7. 3/4 c sugar
  8. 3 T flour
  9. 3 eggs
  10. 1 (16 oz) can peach halves, drained, pureed
  11. 1/4 c Amaretto liqueur or 1/2 t almond extract
  12. toasted almond slices, for garnish (optional)
  13. peach slices, for garnish (optional)

Instructions

  1. Heat oven to 450°F
  2. Crust

  3. Beat margarine and sugar at medium speed with electric mixer until light and fluffy.
  4. Blend in egg.
  5. Add flour; mix well.
  6. Spread dough onto bottom of 9 inch springform pan.
  7. Bake 10 minutes.
  8. Filling

  9. Beat cream cheese, sugar and flour at medium speed with electric mixer until well blended.
  10. Add eggs, one at a time, on low speed, mixing well after each addition.
  11. Add peaches and liqueur or extract; mix well on low speed.
  12. Pour over crust.
  13. Bake 10 minutes.
  14. Reduce oven temperature to 250°F; continue baking 1 hour and 5 minutes.
  15. Loosen cake from rim of pan; cool before removing rim of pan.
  16. Refrigerate until serving.
  17. Garnish with toasted almond slices and additional peach slices, if desired.
