Chocolate Mousse

  1. 1 t unflavored gelatin
  2. 1 T cold water
  3. 2 T boiling water
  4. 1/2 c sugar
  5. 1/4 c Hershey's Cocoa powder
  6. 1 c cold whipping cream (1/2 pt)
  7. 1 t vanilla extract
  8. garnish options: raspberries, mint leaves, chocolate bar curls


  1. Sprinkle gelatin over cold water in small bowl; let stand 1 minute to soften.
  2. Add boiling water; stir until gelatin is completely dissolved and mixture is clear. Cool slightly.
  3. Stir together sugar and cocoa in medium bowl; add whipping cream and vanilla.
  4. Beat on medium speed of electric mixer, scraping bottom of bowl occasionally, until mixture is stiff.
  5. Pour in gelatin mixture; beat until well blended.
  6. Spoon into serving dishes.
  7. Refrigerate about 30 minutes before serving.
  8. Garnish as desired.
